The winter crab kaiseki course menu includes crab sashimi, boiled crab, grilled crab, and crab shell grilled, allowing you to enjoy the flavor of the ingredients in a straightforward manner. Among crab dishes, crab shell grilled with miso is difficult to prepare as it will burn if cooked by an amateur. Here, the owner cooks it to perfection and serves it piping hot. The seasonings are also carefully selected to bring out the flavor of the ingredients, using Kasumizuru local sake, soy sauce from Nara, and kelp from Hokkaido. The recommended dish is the "Tsuiyama crab" crab sashimi. The crab meat is inseparable from the shell, proving that it was alive just a moment ago.
